The Aisling Distillery
Born in Griffith in the mid ‘70s Mark Burns grew up surrounded by the Italian community with its deep connection to cultural heritage. “The Italians had their nice breads, salami, wine, olives, antipasto and a European language,” says Mark, who had little more than his strong Scottish surname to keep him connected to his homeland. What started as a hobby in his spare time turned into a strong desire to craft not just any Whisky but a Single Malt Whisky in the Scotch tradition.
The Aisling Distillery was founded in 2014 to specialize in Small Batch Premium Single Malt Whisky, Rum and more recently Gin and Vodka. They wanted to capture the Riverina also known as “the food bowl of Australia”, and the sheer beauty of the Griffith Region, New South Wales, the heart of the Murrumbidgee that is home to so many traditions.

One of the regions’ premium wine experiences, and a must-visit destination when in the Riverina; the Yarran Cellar Door provides a truly unique atmosphere.
Immerse yourself within their surrounding vineyards and Cocoparra National Park views, whilst enjoying one of the curated wine experiences on offer. From staff-guided tastings to seasonal local produce pairings; they invite you to settle into their friendly and relaxed approach.
Their range consists of wines crafted from their organically certified vineyards, together with small-batch styles of less-known varieties unique to our region and winery. Regional flagship styles including Durif and Pinot Grigio, or perhaps be introduced to something unique to Yarran such as the recently released Montepulciano Pét Nat (Pétillant Naturel) – available exclusively at Cellar Door.
